Erutan Restaurant / Bar

18 DECEMBER 2019

Mail Magazine Vol. 21
December 2019
On December 9, 2019, Transit General Office will open Erutan Restaurant / Bar located on
the 1 st floor of the new commercial facility, Good Nature Station. The restaurant is found in
the heart of Kawaramachi, Kyoto.
The menu at Erutan, an all-day dining, casual restaurant focuses on fresh vegetables. Food
director, Hiroshi Tokuyoshi, uses his experiences in Italy and blends it with Japanese
essences in creating a simple, yet delicious menu. He uses seasonal and local vegetables,
but also focuses on recycling and reusing unwanted compost. The skin and roots of various
vegetables are used in making housemade jams. The rice is also produced in a particular
farming method, using waste that comes straight out of the facility.
But that’s not all! In the restaurant, we have the BERKEL slicer; an Italian meat slicer that
can only be found in a few restaurants in the Kansai area. Enjoy our freshly cut prosciutto
for breakfast, lunch and dinner!
On December 3, 2019, Transit General Office opens 2 new concepts inside Nagoya,
Kawaramachi’s Vermicular Village! Transit was appointed for not only the creative
production side of the 2 facilities, but also the operations of the restaurant and bakery café.
This area focuses all on Vermicular; an original casting iron brand created in Japan by Aichi
Dobby Ltd.
Facility Concept (Experience Vermicular)
In the facility, there are various themes that we would like for all our customers to
experience: “taste the true beauty of vermicular”, “the world of vermicular” and “made in
Japan concept”. The DINE AREA is split into 2 spaces: the dining area and the retail/
experience “Studio Area” that includes the flagship store, cooking classes, cookbook library
and so much more.
Facility Information
The location of the Vermicular Village is the exact same place that Aichi Dobby was
founded in 1936. Overlooking the Nakagawa Canal, this beautiful location has been
selected as the spot for the “Canal Revitalization Project”; a project that is working towards
bringing this historical spot back to life.
<DINING AREA>
Transit General Office is in charge of the restaurant, “Vermicular Restaurant The Foundry”
and bakery café “Vermicular Pot Made Bakery”.
■VERMICULAR RESTAURANT THE FOUNDRY
Open for breakfast, lunch and dinner, guests can enjoy the beautiful view of the Nakagawa
canal while tasting the true flavors of what food should taste like in Vermicular pots. All
dishes use Vermicular products in some way; some even served in the pots, just the way
it’s cooked. We also recommend dishes roasted in our wood kiln, full of aroma and deep
flavors.
■VERMICULAR POT MADE BAKERY
We have over 10 different kinds of pastries, all made in our cast iron pots. The inside is
chewy while the outside is crunchy; an irresistible sensation recommended for everyone.
